Sindhi Biryani Recipe

INGREDIENTS:

Chicken 1/2 kg 
• Large Onions 2 
• Yogurt 200 gm 
• Large Tomatoes 4 
• All SpIce Powder 1 tbsp 
• Red Chilli Powder 1 tbsp 
• Green Chilli 6-8 
Coriander Powder 1 tbsp 
Coriander Fresh 1 cup 
• Mint Fresh 1 cup 
• Black Cumin 1 tsp 
• Black Cardamoms 4 
Cloves 4 
Cinnamon 1 stick 
• Black Pepper 6-8 
• Bay Leaves 2 
• Dry Plum 150 gm 
• RIce 1/2 kg 
Ginger Garlic Paste 2 tbsp 

How to make Sindhi Biryani



METHOD:

1. For Rice: In a cooking pot heat oil and add cloves, black cardamom (broken), bay leaves, cinnamon, stir fry. 
2. Now add water (equal to the amount of rice), black cumin, black pepper and boil. 
3. When it boils, add rice to it and simmer medium flame till water dries. 
4. For Korma: Heat oil in a saucepan, and fry onion till brown. 
5. Then add tomato, plum and all spices. 
6. Stir fry and add chicken and cook for 15 minutes. 
7. At the end add yogurt and further cook for 2-3 minutes. 
8. Now take half of cooked rice in a separate dish, and spread the cooked qorma over it. 
9. Lay green seasoning (mint, coriander and green chillies) on it, spread the remaining cooked Rice and again lay green seasoning on top. 
10. Cover and simmer on light flame for 15 minutes or until done. 

Sindhi biryani is an extraordinary recipe from Sindhi cuisine. It didn't only got fame within the country but also came in limelight internationally. It's special cooking method and out of the ordinary spices make it a natural choice of food lovers.

Smelling biryani? You must be. Here is a special recipe of spicy Hyderabadi chicken biryani. This biryani renders a wonderful taste enriched with basmati rice and spiced chicken. Hyderabadi Chicken Biryani Recipe

INGREDIENTS:

400 gms whole Chicken 
2 cups basmati rIce 
Onions slIce
Tomatoes chopped 
2 cups fresh yogurt 
2 tbsp Ginger-Garlic paste 
5-6 Green chillies chopped 
1 tsp red Chilli powder 
1/2 tsp Turmeric powder 
2 tsp Coriander powder 
1 tsp green Cardamom powder 
1/2 tsp Garam masala powder 
1/2 fresh Lemon juIce 
A pinch of Saffron 
2 tbsp Milk 
1 cup fresh Coriander leaves chopped 
2 tbsp fresh Mint leaves chopped 
4 tbsp Ghee 
Vegetable Oil 
Salt to taste


How to make Hyderabadi Chicken Biryani

 

METHOD:

Preparation time: 10 minutes | Cooking time: 40 minutes | Servings: 4 

1. In a big bowl, cut the pieces of chicken in big chunks, wash and clean thoroughly. 
2. Combine yogurt, the ground masala paste, salt, red chilli powder, turmeric powder, coriander powder, garam masala and lemon juice. 
3. Mix well. Add the pieces of chicken, also add 2 tsp oil. 
4. Keep this marinated chicken aside for about 2-3 hours. 
5. Heat sufficient oil in a pan, deep fry the onion and take out immediately after it turns into golden brown in color. Keep aside to cool. 
6. In a blender combine half of the fried onion, chopped tomatoes, green chillies, ginger, garlic, mint leaves and coriander leaves. 
7. Blend to make a smooth paste. 
8. Soak the saffron in the milk and keep aside, as it will be used later. 
9. Wash the rice thoroughly in water, soak for about 10 minutes. 
10. Boil the rice in plenty amount of water, add little bit of salt and whole garam masala. 
11. When the rice are 3/4th done then drain and keep in the sieve. 
12. Remove out the whole garam masala ingredients, as they were just for flavoring rice, which is quite done. 
13. Heat the pan or kadhai, melt 2 tbsp of ghee. 
14. Now place half quantity of marinated chicken with its whole marination. 
15. Then cover the chicken with the layer of rice. 
16. Sprinkle some fried onions, half of the cardamom powder, chopped coriander and saffron. 
Also add the remaining ghee. 
Again repeat the same procedure and arrange the remaining chicken, rice and other ingredients. 
Cover the pan with the tight lid. 
Leave to cook for about 20-22 minutes on low flame. 
Check twice in between and fluff up with a fork. 
Check the tenderness of chicken, if it is cooked fully, then turn off the gas. 
Serve hot with raita or as it is.

اجزاء:
چکن ---- سوا کلو 
چاول ---- ایک کلو 
ادرک لہسن پسا ہوا ---- دو کھانے کے چمچ 
نمک ---- حسب ذائقہ 
پیاز (باریک کٹی ہوئی) ---- تین عدد درمیانی 
ٹماٹر (باریک کٹے ہوئے) ----- چھ عدد درمیانے 
دہی (پھینٹا ہوا) ----- ایک پیالی 
سفید زیرہ ---- ایک چائے کا چمچ 
ہلدی پسی ہوئی ---- ایک چائے کا چمچ 
لال مرچ پسی ہوئی ---- دو کھانے کے چمچ 
دھنیا پسا ہوا ---- ایک کھانے کا چمچ 
گرم مصالحہ پسا ہوا ---- ایک کھانے کا چمچ 
ہری مرچیں (باریک کٹی ہوئی) ---- چھ سے آٹھ عدد 
ہرا دھنیا (باریک کٹا ہوا) ---- آدھی گٹھی 
پودینہ (باریک کٹا ہوا) ---- آدھی گٹھی 
ثابت گرم مصالحہ ----- دو کھانے کے چمچ 
زردے کا رنگ ---- ایک چٹکی

Chicken Biryani banane ka tarika

 
ترکیب:
دیگچی میں کوکنگ آئل کو درمیانی آنچ پر تین سے پانچ منٹ گرم کر کے ثابت گرم مصالحہ ڈال دیں- جب کڑکڑانے لگے تو پیاز ڈال کر سنہرا فرائی کر لیں- 
ادرک٬ لہسن٬ ہلدی اور زیرہ ڈال کر دو سے تین منٹ تک چمچ چلائیں اور پھر ٹماٹر شامل کر کے اتنی دیر پکائیں کہ ٹماٹر گل جائیں 
جب ٹماٹر اچھی طرح گل جائیں اور ایک پیسٹ کی شکل میں آ جائیں تو چکن٬ نمک٬ لال مرچ٬ پسا ہوا دھنیا٬ پسا ہوا گرم مصالحہ٬ ہری مرچیں٬ ہرا دھنیا اور پودینہ ڈال دیں- پھر دہی ڈال کر اچھی طرح ملائیں اور درمیانی آنچ پر بارہ سے پندرہ منٹ تک پکائیں- 
چاولوں کو تھوڑے سے ثابت گرم مصالحے کے ساتھ ایک کنی (مکمل ابلنے سے تین چار منٹ پہلے) ابال کر چھلنی سے پانی چھان لیں- 
بڑے سائز کی دیگچی میں چکن کو پھیلا کر رکھیں اور اس کے اوپر چاولوں کی تہہ لگا دیں- دودھ میں زردے کا رنگ اور کیوڑہ ایسنس ملا کر چاولوں پر چھڑ ک دیں- 
دیگچی کو ڈھک کر پندرہ سے بیس منٹ کے لیے گرم توے پر رکھ کر ہلکی آنچ پر(دم پر) پکائیں-
